Chicken Quesadillas are a quick and flavorful dish made with tender seasoned chicken, melted cheese, and crispy tortillas. Perfect for lunch, dinner, or snacks, they deliver a satisfying combination of crunchy texture and cheesy filling.

Ingredients

  • 2 cups cooked chicken breast, shredded or diced
  • 4 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 tablespoon olive oil or butter
  • 1/4 cup onion, finely chopped
  • 1/2 cup bell pepper, diced
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons fresh cilantro, chopped (optional)

Instructions

  1. Heat a skillet over medium heat and add olive oil or butter.
  2. Add the chopped onion and diced bell pepper, cooking until softened.
  3. Stir in the minced garlic and cook for about 30 seconds until fragrant.
  4. Add the cooked chicken and season with chili powder, cumin, salt, and black pepper.
  5. Cook for a few minutes until the chicken is heated through and well coated with seasoning.
  6. Remove the chicken mixture from the skillet and set aside.
  7. Place a tortilla in the skillet over medium heat.
  8. Sprinkle a layer of shredded cheese over half of the tortilla.
  9. Add some of the chicken mixture on top of the cheese.
  10. Sprinkle additional cheese over the chicken and fold the tortilla in half.
  11. Cook for about 2–3 minutes on each side until the tortilla is golden and crispy and the cheese is melted.
  12. Remove from the skillet and repeat with the remaining tortillas and filling.
  13. Slice into wedges and garnish with chopped cilantro if desired before serving.

Notes

  • Rotisserie chicken can be used to save preparation time.
  • Pepper jack or Monterey Jack cheese can add extra flavor or spice.
  • Add black beans, corn, or mushrooms for more filling and texture.
  • Serve with salsa, guacamole, sour cream, or pico de gallo.
  • Reheat in a skillet or oven to keep the tortillas crispy.
