Ingredients

  • 2 cups cooked chicken breast, sliced or shredded
  • 4 slices sandwich bread, ciabatta, or baguette
  • 1/4 cup basil pesto
  • 4 slices mozzarella cheese
  • 1 medium tomato, sliced
  • 1/2 cup lettuce or arugula
  • 1 tsp olive oil
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Slice the bread or sandwich rolls in half if needed.
  2. Lightly toast the bread in a skillet, toaster, or oven until golden.
  3. Spread basil pesto evenly on the inside of the bread.
  4. Layer the sliced or shredded chicken on the bottom half of the bread.
  5. Place mozzarella cheese slices on top of the chicken.
  6. Add tomato slices and lettuce or arugula.
  7. Drizzle olive oil lightly over the vegetables.
  8. Season with salt and black pepper to taste.
  9. Place the top slice of bread over the filling.
  10. Serve immediately or warm briefly to melt the cheese.
