Chicken Pasta Salad is a refreshing and satisfying dish made with tender chicken, al dente pasta, crisp vegetables, and a creamy, flavorful dressing. Perfect for meal prep, picnics, or family gatherings, this chilled salad is easy to make and packed with texture and flavor.

Ingredients

  • 12 ounces rotini or penne pasta
  • 2 cups cooked chicken breast, diced or shredded
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/2 cup shredded carrots
  • 1/2 cup mayonnaise
  • 1/4 cup plain Greek yogurt
  • 1 tablespoon Dijon mustard
  • 1 tablespoon lemon juice
  • 1 teaspoon dried Italian seasoning
  • Salt and black pepper to taste
  • 2 tablespoons chopped fresh parsley

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and rinse under cold water until completely cooled. Set aside.
  2. In a large bowl, combine cooked chicken, cherry tomatoes, cucumber, red onion, and shredded carrots.
  3. In a small bowl, whisk together mayonnaise, Greek yogurt, Dijon mustard, lemon juice, Italian seasoning, salt, and black pepper until smooth.
  4. Add the cooled pasta to the bowl with the chicken and vegetables.
  5. Pour the dressing over the mixture and toss gently until evenly coated.
  6. Stir in the chopped fresh parsley.
  7. Cover and refrigerate for at least 30 minutes before serving to allow flavors to blend.

Notes

  • Rotisserie chicken works well and saves time.
  • Short pasta shapes like rotini or bowtie hold dressing best.
  • If salad becomes dry after chilling, stir in a spoonful of mayonnaise or yogurt.
  • Pat vegetables dry to prevent excess moisture.
  • Not recommended for freezing due to creamy dressing.
