Chicken Paillard is a classic French dish made with thinly pounded chicken breasts quickly seared to golden perfection. Light, flavorful, and ready in under 20 minutes, it’s perfect for a healthy and elegant meal.

Ingredients

  • 4 boneless, skinless chicken breasts
  • Salt, to taste
  • Black pepper, to taste
  • 2 tablespoons olive oil or butter
  • Lemon wedges, for serving
  • Optional: 1 garlic clove, minced
  • Optional: Fresh herbs (thyme or parsley)
  • Optional: Arugula
  • Optional: Shaved Parmesan
  • Optional: Cherry tomatoes

Instructions

  1. Place each chicken breast between two sheets of plastic wrap or parchment paper.
  2. Pound the chicken to about ¼ inch thickness using a meat mallet or rolling pin.
  3. Season both sides with salt and pepper.
  4. Heat olive oil or butter in a large skillet over medium-high heat.
  5. Add the chicken and cook for 2–3 minutes per side, until golden brown and cooked through.
  6. Remove from the skillet and let rest for a couple of minutes.
  7. Serve with lemon wedges and optionally top with arugula, shaved Parmesan, and cherry tomatoes.

Notes

  • Do not overcook the chicken—because it’s thin, it cooks very quickly.
  • Marinate in lemon juice and olive oil for extra flavor, though not required.
  • Great served over salad, risotto, or with roasted vegetables.
  • Can be grilled for added smoky flavor.
  • Best enjoyed fresh for optimal texture.
