Ingredients

  • 2 cups cooked, grilled or shredded chicken breast
  • 1 large ripe mango, diced
  • 4 cups mixed greens (spinach, arugula, or romaine)
  • 1 red bell pepper, thinly sliced
  • 1/2 cucumber, sliced or diced
  • 1/4 red onion, thinly sliced
  • 1 avocado, diced
  • 2 tablespoons fresh cilantro or mint (optional)
  • 3 tablespoons olive oil
  • 2 tablespoons lime juice or rice vinegar
  • 1 teaspoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. In a small bowl, whisk together olive oil, lime juice, honey, Dijon mustard, salt, and pepper to make the dressing. Set aside.
  2. In a large bowl or platter, layer the mixed greens as a base.
  3. Top with chicken, mango, bell pepper, cucumber, red onion, and avocado.
  4. Drizzle the dressing over the salad just before serving.
  5. Gently toss to combine and garnish with fresh herbs if desired. Serve immediately.
