Chicken Kyiv is a luxurious dish known for its crispy breading, tender chicken, and rich garlic butter filling. The chicken is stuffed with garlic, herbs, and butter, then breaded and fried to golden perfection, creating a delicious contrast of textures. It’s perfect for special occasions or an indulgent dinner.

Ingredients

  1. 4 boneless, skinless chicken breasts
  2. 1/2 cup all-purpose flour
  3. 2 large eggs, beaten
  4. 1 1/2 cups breadcrumbs (preferably panko for extra crispiness)
  5. Vegetable oil for frying
  6. For the garlic herb butter filling:
  7. 1/2 cup unsalted butter, softened
  8. 3 cloves garlic, minced
  9. 2 tablespoons fresh parsley, chopped
  10. 1 tablespoon fresh dill, chopped (optional)
  11. 1 teaspoon lemon zest (optional)
  12. Salt and pepper to taste

Instructions

Prepare the garlic herb butter by combining softened butter, minced garlic, parsley, dill (if using), lemon zest (if using), salt, and pepper. Mix until fully incorporated, then shape into a log using plastic wrap and refrigerate for at least 1 hour.

  1. Prepare the chicken by pounding each breast between sheets of plastic wrap to an even thickness of 1/2-inch. Cut the chilled garlic herb butter into 4 portions. Place one portion in the center of each chicken breast, fold the sides over the butter, and roll tightly to seal. Secure with toothpicks.
  2. Bread the chicken by dipping each stuffed chicken breast in flour, then in beaten eggs, and finally in breadcrumbs. Press gently to ensure the coating sticks well.
  3. Heat vegetable oil in a skillet over medium-high heat. Fry the chicken for 4-5 minutes on each side, until golden brown and crispy. Drain on paper towels.
  4. Remove toothpicks and serve immediately, garnished with extra parsley if desired. Serve with mashed potatoes or a fresh salad.

Notes

  • For a cheese variation, add grated cheese such as Parmesan or mozzarella to the garlic butter filling.
  • To prevent the garlic butter from leaking out while frying, freeze the stuffed chicken breasts for 15-20 minutes before cooking.
  • For a lighter option, you can bake the chicken at 375°F (190°C) for 25-30 minutes instead of frying.
