Ingredients

  • Chicken thighs, boneless and skinless
  • Olive oil

  • Pita bread
  • Greek yogurt
  • Cucumber, grated and drained
  • Garlic, minced (for tzatziki)

  • Fresh dill, chopped
  • Tomatoes, diced
  • Red onion, thinly sliced
  • Lettuce, shredded

Instructions

  1. In a bowl, combine olive oil, lemon juice, minced garlic, oregano, paprika, cumin, salt, and black pepper to create the marinade.
  2. Add the chicken thighs and coat well. Cover and refrigerate for at least 30 minutes or up to 4 hours.
  3. Prepare the tzatziki sauce by mixing Greek yogurt, grated and drained cucumber, minced garlic, lemon juice, olive oil, salt, and chopped dill in a bowl. Refrigerate until ready to serve.
  4. Heat a skillet or grill pan over medium-high heat.
  5. Cook the marinated chicken for about 5–6 minutes per side until fully cooked and lightly charred.
  6. Transfer the chicken to a plate and let it rest for a few minutes.
  7. Slice the chicken into thin strips.
  8. Warm the pita bread briefly in a skillet or oven until soft.
  9. Place sliced chicken onto the pita bread.
  10. Top with diced tomatoes, sliced red onion, shredded lettuce, and a generous spoonful of tzatziki sauce. Fold and serve.
