Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 2 cups chopped romaine lettuce
  • 1/3 cup Caesar dressing
  • 1/4 cup freshly grated Parmesan cheese
  • 4 crusty sandwich rolls or ciabatta bread
  • Optional: croutons for added crunch

Instructions

  1. Preheat a grill pan or skillet over medium heat.
  2. Rub chicken breasts with olive oil, salt, pepper, and garlic powder.
  3. Cook the chicken for 5–7 minutes per side, or until fully cooked and juices run clear.
  4. Remove from heat and let rest for 5 minutes, then slice thinly.
  5. In a bowl, toss chopped romaine with Caesar dressing and Parmesan cheese.
  6. Lightly toast the sandwich rolls or ciabatta bread.
  7. Layer the dressed lettuce, sliced chicken, and extra Parmesan (and optional croutons) on the bread.
  8. Close the sandwich, slice in half, and serve immediately.
