Ingredients

  1. 3 cups cooked chicken, shredded or diced
  2. 3 cups broccoli florets (fresh or frozen, steamed until crisp-tender)
  3. 1 box (6 oz) stuffing mix (e.g., Stove Top)
  4. 1 can (10.5 oz) cream of chicken soup
  5. 1/2 cup sour cream or mayonnaise (optional)
  6. 1 cup chicken broth (for stuffing)
  7. 2 tbsp butter (for stuffing)
  8. 1/2 tsp salt
  9. 1/4 tsp black pepper
  10. 1/2 tsp onion powder or garlic powder (optional)
  11. 1 cup shredded cheddar cheese (optional, for topping)

Instructions

Preheat oven to 375°F (190°C).

  1. Prepare stuffing mix according to package directions using chicken broth and butter instead of water. Set aside.
  2. Steam or microwave broccoli until just tender. Drain excess water.
  3. In a large bowl, mix cooked chicken, broccoli, cream of chicken soup, sour cream or mayo (if using), salt, pepper, and optional seasonings.
  4. Spread the mixture evenly in a greased 9×13-inch baking dish.
  5. Top with shredded cheddar cheese if using.
  6. Spoon the prepared stuffing evenly over the top of the casserole.
  7. Bake uncovered for 30–35 minutes until hot and bubbly with a golden stuffing top.
  8. Let rest for 5 minutes before serving.
