The Chicken Avocado Melt Sandwich combines juicy chicken, creamy avocado, and melty cheese between crispy, golden bread slices. Perfect for a quick yet satisfying lunch or dinner, it’s comforting, flavorful, and easy to make.

Ingredients

  1. 2 cooked chicken breasts, sliced or shredded
  2. 1 ripe avocado, sliced
  3. 1 tsp lemon juice
  4. Salt and pepper, to taste
  5. 4 slices cheese (Swiss, provolone, or cheddar)
  6. 4 slices sourdough or ciabatta bread
  7. 2 tbsp mayonnaise or aioli (optional)
  8. 4 tomato slices (optional)
  9. 2 tbsp butter or olive oil (for grilling)

Instructions

Slice avocado and toss with lemon juice, salt, and pepper.

  1. If desired, spread mayonnaise or aioli on the inside of bread slices.
  2. Layer cheese, chicken, avocado, and tomato (if using) on one slice of bread. Add another slice of cheese and top with the second bread slice.
  3. Butter the outside of the bread or brush with olive oil.
  4. Heat a skillet or grill pan over medium heat.
  5. Cook sandwich for 3–4 minutes per side, pressing gently, until golden brown and cheese is melted.
  6. Slice and serve hot.

Notes

  • Use rotisserie chicken for a quick shortcut.
  • Add bacon or jalapeños for extra flavor.
  • Make open-faced by toasting under the broiler.
  • Best served fresh—avocado does not freeze well.
  • Reheat in skillet or toaster oven to keep bread crispy.
