Ingredients

  1. 1 pound chicken-apple sausage, casings removed and crumbled
  2. 6 large eggs
  3. 1/4 cup milk
  4. 1 medium apple, diced
  5. 1/2 cup diced onion
  6. 1/2 cup shredded cheese (cheddar or Monterey Jack)
  7. 4 large whole wheat or flour tortillas
  8. 1 tablespoon olive oil or cooking spray
  9. Salt and pepper to taste
  10. Optional toppings: salsa, avocado slices, sour cream, cilantro

Instructions

Heat olive oil in a skillet over medium heat. Cook crumbled chicken-apple sausage until browned and cooked through, about 7-8 minutes. Remove and set aside.

  1. In the same skillet, sauté diced apples and onions until softened, about 3-4 minutes.
  2. Whisk eggs with milk, salt, and pepper. Pour into skillet with apples and onions and cook, stirring gently, until softly scrambled.

  5. Fold sides and roll up tortillas tightly to form burritos.
