Ingredients

  • For the chicken:
  • 1.52 lbs boneless chicken thighs or drumsticks
  • 1 cup buttermilk
  • 1 1/2 cups all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp cayenne pepper (optional)
  • Vegetable oil (for frying)
  • For the waffles:
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 2 tbsp granulated sugar
  • 1/2 tsp salt
  • 2 large eggs
  • 1 1/2 cups milk or buttermilk
  • 1/3 cup unsalted butter, melted
  • 1 tsp vanilla extract
  • To serve:
  • Maple syrup (warmed)
  • Butter (optional)
  • Hot sauce (optional)

Instructions

  1. Marinate the chicken: Combine chicken and buttermilk in a bowl. Cover and refrigerate for at least 1 hour or overnight.
  2. Make waffle batter: In a large bowl, whisk flour, baking powder, sugar, and salt. In another bowl, whisk eggs, milk, melted butter, and vanilla. Combine wet and dry ingredients and stir just until mixed. Set aside.
  3. Dredge the chicken: In a shallow dish, mix flour with salt, pepper, paprika, garlic powder, onion powder, and cayenne. Remove chicken from marinade, letting excess drip off, then coat thoroughly in seasoned flour.
  4. Fry the chicken: Heat oil in a skillet or deep pan to 350°F (175°C). Fry chicken in batches for 7–10 minutes until golden and cooked through. Drain on a wire rack.
  5. Make the waffles: Preheat your waffle iron. Pour batter into the iron and cook until waffles are golden and crisp.
  6. Assemble and serve: Place chicken on top of waffles, drizzle with warm maple syrup, and serve with butter or hot sauce if desired.
