This Chicken and Mushroom Stroganoff Pasta is a creamy, comforting dish featuring tender chicken, earthy mushrooms, and a rich sour cream sauce tossed with pasta — perfect for weeknight dinners or casual gatherings.

Ingredients

  • 2 chicken breasts, cut into bite-sized pieces
  • 8 oz mushrooms (cremini or button), sliced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 2 tbsp all-purpose flour
  • 1 1/2 cups chicken broth
  • 1/2 cup sour cream
  • 1 tbsp Dijon mustard
  • 1/2 tsp paprika
  • Salt, to taste
  • Black pepper, to taste
  • 8 oz pasta (fettuccine, penne, or egg noodles)
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. In a large skillet, heat olive oil and 1 tbsp butter over medium heat. Add the chicken pieces and cook until browned and cooked through. Remove from skillet and set aside.
  3. In the same skillet, add the remaining butter if needed. Sauté onions until translucent, then add garlic and cook for 30 seconds.
  4. Add mushrooms and cook until they release their moisture and turn golden brown.
  5. Sprinkle the flour over the mushroom mixture and stir to coat evenly.
  6. Gradually pour in chicken broth, stirring constantly to prevent lumps. Simmer until the sauce thickens slightly.
  7. Stir in sour cream, Dijon mustard, and paprika. Season with salt and pepper to taste.
  8. Return the cooked chicken to the skillet and stir to coat in the sauce. Let simmer for a few minutes.
  9. Add the cooked pasta to the skillet and toss until well combined and heated through.
  10. Garnish with fresh parsley if desired and serve warm.
