Chewy Banana Oat Bars are soft, wholesome snack bars made with ripe bananas, hearty oats, and naturally sweet ingredients. Perfect for breakfast on the go, lunchboxes, or a healthy afternoon treat.

Ingredients

  • 2 ripe bananas, mashed
  • 2 cups rolled oats
  • 1/4 cup honey or maple syrup
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup milk or almond milk
  • 1/3 cup chocolate chips or raisins
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper or lightly grease it.
  2. In a large bowl, mash the ripe bananas until smooth.
  3. Add honey or maple syrup, eggs, vanilla extract, and milk. Mix until well combined.
  4. Stir in rolled oats, baking powder, cinnamon, and salt.
  5. Fold in chocolate chips, raisins, or chopped nuts if using.
  6. Pour the mixture into the prepared pan and spread evenly.
  7. Bake for 20–25 minutes until set and lightly golden on top.
  8. Allow bars to cool completely in the pan before slicing.
  9. Cut into squares or bars and serve.

Notes

  • Very ripe bananas give the best sweetness and flavor.
  • Let the bars cool fully before slicing to help them hold their shape.
  • You can blend oats into oat flour for a softer, cake-like texture.
