Ingredients

  • 1 cup couscous
  • 1 1/2 cups cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tablespoons fresh mint, chopped (optional)
  • 1/2 cup feta cheese, crumbled
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 clove garlic, minced
  • Salt and black pepper to taste

Instructions

  1. Prepare the couscous according to package directions. Fluff with a fork and let it cool.
  2. In a large bowl, combine the cooled couscous, cherry tomatoes, cucumber, red onion, parsley, and mint.
  3. In a small bowl, whisk together olive oil, lemon juice, garlic, salt, and black pepper.
  4. Pour the dressing over the salad and toss gently until well mixed.
  5. Add crumbled feta cheese and stir lightly to combine.
  6. Chill for 20–30 minutes before serving to let the flavors meld.
