Cherry tomato confit is a simple, yet luxurious dish where cherry tomatoes are slow-cooked in olive oil and herbs to enhance their natural sweetness. It’s perfect for a variety of dishes, from pasta to sandwiches, and adds an elegant touch to any meal.

Ingredients

2 cups cherry tomatoes, halved
1/2 cup extra virgin olive oil
3 garlic cloves, smashed
12 sprigs fresh thyme
1 sprig fresh rosemary
1 tsp dried oregano
Salt and pepper to taste
1 tsp balsamic vinegar (optional)

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. Arrange the halved cherry tomatoes in a single layer in a baking dish or oven-safe pan.
  3. Add the smashed garlic cloves, thyme, rosemary, and dried oregano to the pan.
  4. Pour the olive oil over the tomatoes, ensuring they are well-coated. Season with salt and pepper to taste.
  5. Place the dish in the oven and cook for 1 hour, or until the tomatoes are soft, slightly caramelized, and the skins are beginning to wrinkle.
  6. Remove from the oven and stir in the balsamic vinegar, if using.
  7. Let the confit cool slightly before serving. You can enjoy it immediately or store it in an airtight container in the fridge for up to 1 week.
