Cherry Pie Bars are a simple and delicious dessert featuring a buttery, cake-like crust layered with sweet cherry pie filling and topped with dollops of golden dough. Perfect for parties or potlucks, they deliver all the flavor of cherry pie in an easy-to-slice format.

Ingredients

  • 1 cup unsalted butter, softened
  • 1 3/4 cups granulated sugar
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract (optional)
  • 3 cups all-purpose flour
  • 1/2 tsp salt
  • 1 can (21 oz) cherry pie filling
  • Optional Glaze:
  • 1 cup powdered sugar
  • 12 tbsp milk
  • 1/4 tsp vanilla or lemon extract (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a 9×13-inch baking dish with parchment paper.
  2. Cream butter and sugar together in a large mixing bowl until light and fluffy.
  3. Beat in eggs one at a time, then mix in vanilla extract and almond extract if using.
  4. Gradually add flour and salt, mixing until a soft dough forms.
  5. Spread about two-thirds of the dough evenly into the prepared pan.
  6. Spoon cherry pie filling evenly over the dough.
  7. Drop spoonfuls of the remaining dough over the top of the cherry filling, leaving some gaps.
  8. Bake for 35–40 minutes, or until the top is lightly golden and filling is bubbling.
  9. Let cool completely in the pan.
  10. Optional: Mix powdered sugar and milk to make a glaze. Drizzle over cooled bars before serving.

Notes

  • Let bars cool completely before slicing for clean cuts.
  • Use parchment paper for easy removal from the pan.
  • Substitute cherry filling with blueberry, apple, or peach for variation.
  • Almond extract enhances the cherry flavor but can be omitted.
