Cherry Pie Bars are a simple and delicious dessert made with a buttery crust, sweet cherry pie filling, and a soft crumble topping. They’re easier than making a pie and perfect for sharing at gatherings or enjoying as an everyday treat.

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract (optional)
  • 1 can (21 oz) cherry pie filling (or homemade)
  • Optional glaze: 1 cup powdered sugar, 1–2 tablespoons milk, 1/2 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and grease or line a 9×13-inch baking pan with parchment paper.
  2. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add eggs one at a time, beating well after each. Mix in vanilla and almond extract (if using).
  4. In a separate bowl, whisk together flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture until fully combined.
  6. Spread about 2/3 of the batter evenly into the prepared pan.
  7. Spoon cherry pie filling evenly over the base layer.
  8. Drop spoonfuls of the remaining batter over the cherry layer.
  9. Bake for 30–35 minutes or until the top is golden and a toothpick inserted into the center comes out clean.
  10. Allow bars to cool completely. If using glaze, whisk glaze ingredients together and drizzle over cooled bars before slicing.

  • Use homemade cherry pie filling for a fresher flavor.
  • Try lemon juice in the glaze for a citrusy twist.
  • Bars can be frozen for up to 2 months—wrap tightly and thaw before serving.
