Ingredients
4 cups fresh or frozen cherries, pitted
1/2 cup granulated sugar
2 tbsp cornstarch
1 tbsp lemon juice
1 tsp vanilla extract
Pinch of salt
3/4 cup all-purpose flour
1/2 cup rolled oats
1/3 cup brown sugar
1/2 cup chopped hazelnuts
1/2 tsp ground cinnamon
1/4 tsp salt
6 tbsp unsalted butter, cold and cubed
Instructions
Preheat oven to 375°F (190°C). Lightly grease a 9-inch baking dish.
In a large bowl, combine cherries, granulated sugar, cornstarch, lemon juice, vanilla extract, and a pinch of salt. Toss to coat and transfer to the baking dish.
In another bowl, mix flour, oats, brown sugar, chopped hazelnuts, cinnamon, and salt.
Add cold, cubed butter and cut it into the dry ingredients using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
Sprinkle the hazelnut streusel evenly over the cherry filling.
Bake for 35–40 minutes or until the top is golden and filling is bubbling.
Let cool slightly before serving warm or at room temperature.
Notes
Toasting hazelnuts enhances their flavor—toast, cool, and chop before using.
Use fresh or frozen cherries; if frozen, no need to thaw before baking.
Cover with foil if the topping browns too quickly.
Serve with vanilla ice cream or whipped cream for extra indulgence.
