Cherry Bread is a moist and tender quick bread bursting with sweet cherries and warm flavor. Perfect for breakfast, brunch, or dessert, it’s easy to make and completely customizable with add-ins like nuts or chocolate.

Ingredients

  • 1 1/2 cups fresh or frozen cherries, pitted and chopped
  • 2 cups all-purpose flour
  • 3/4 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 large eggs
  • 1/2 cup milk or buttermilk
  • 1/2 cup vegetable oil or melted butter
  • 1 tsp vanilla extract
  • Optional: 1/2 cup chopped nuts or chocolate chips
  • Optional: 1/2 tsp almond extract

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In a separate bowl, mix eggs, milk (or buttermilk), oil (or melted butter), vanilla extract, and almond extract if using.
  4. Pour wet ingredients into dry ingredients and stir until just combined.
  5. Gently fold in cherries and optional add-ins. Do not overmix.
  6. Transfer batter to prepared loaf pan and smooth the top.
  7. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely.

Notes

  • Coat cherries lightly in flour before adding to prevent sinking.
  • Frozen cherries can be used straight from the freezer.
  • Add a glaze of powdered sugar and milk for extra sweetness.
  • Make mini loaves and adjust bake time to 25–35 minutes.
  • Store leftovers tightly wrapped at room temperature or in the fridge.
