Ingredients

  • 2 cups shredded cooked chicken
  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes (with green chilies if desired)
  • 4 cups chicken broth
  • 1 cup corn kernels (frozen, canned, or fresh)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 4 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup heavy cream or milk
  • 1 cup tortilla strips or crushed tortilla chips (for topping)
  • Lime wedges (for serving)
  • Fresh cilantro, chopped (for garnish)
  • Sour cream (optional, for topping)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and sauté for 4–5 minutes until soft and translucent.
  2. Add garlic and cook for 30 seconds until fragrant.
  3. Stir in diced tomatoes, corn, black beans, chili powder, cumin, paprika, salt, and pepper.
  4. Pour in chicken broth and bring to a simmer.
  5. Add shredded chicken and simmer for 10–15 minutes to blend flavors.
  6. Reduce heat to low. Stir in cream cheese and whisk until fully melted and smooth.
  7. Add shredded cheddar and stir until melted.
  8. Pour in heavy cream or milk and stir until soup is creamy and smooth. Adjust seasoning if needed.
  9. Serve hot topped with tortilla strips, fresh cilantro, lime wedges, and sour cream if desired.
