Cheesy Tater Tot Breakfast Bake is a hearty, crowd-pleasing breakfast casserole made with crispy tater tots, savory sausage, fluffy eggs, and gooey melted cheese. Perfect for brunch, holidays, or make-ahead weekday meals.

Ingredients

  1. 1 (32 oz) bag frozen tater tots
  2. 1 lb breakfast sausage
  3. 8 large eggs
  4. 1 1/2 cups whole milk
  5. 2 cups shredded cheddar cheese, divided
  6. 1/2 teaspoon salt
  7. 1/4 teaspoon black pepper
  8. 1/2 teaspoon garlic powder
  9. 1/2 teaspoon onion powder
  10. 2 tablespoons chopped green onions (optional, for garnish)

Instructions

Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.

  1. In a skillet over medium heat, cook sausage until browned and fully cooked. Drain excess grease.
  2. In a large bowl, whisk together eggs, milk, salt, pepper, garlic powder, and onion powder.
  3. Spread cooked sausage evenly in the prepared baking dish.
  4. Sprinkle half of the shredded cheese over the sausage.
  5. Pour the egg mixture evenly over the sausage and cheese layer.
  6. Arrange frozen tater tots in a single layer on top of the egg mixture.
  7. Sprinkle the remaining cheese over the tater tots.
  8. Bake uncovered for 45–50 minutes, or until eggs are set and tater tots are golden and crispy.
  9. Let cool for 5–10 minutes. Garnish with chopped green onions if desired and serve warm.
