Ingredients

For the Steak Bites:

  • 1 lb sirloin steak, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and freshly ground black pepper, to taste

For the Pasta & Sauce:

  • 8 oz rotini pasta
  • 1 tablespoon unsalted butter
  • 2 cloves garlic, minced
  • ½ cup beef broth
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • 1 cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

Cook the Pasta

  • Bring a large pot of salted water to a boil.
  • Cook rotini pasta according to package instructions until al dente.
  • Drain and set aside.

2. Season and Sear the Steak

  • In a medium bowl, toss the steak pieces with garlic powder, paprika, salt, and black pepper.
  • Heat olive oil in a large skillet over medium-high heat.
  • Add the steak and sear for 2-3 minutes per side until browned and cooked to your desired doneness.
  • Remove steak from the skillet and set aside.

3. Make the Cheese Sauce

  • In the same skillet, reduce heat to medium and add butter.
  • Once melted, add minced garlic and sauté for 30 seconds until fragrant.
  • Pour in beef broth, scraping the pan to deglaze and incorporate any browned bits.
  • Stir in heavy cream and Italian seasoning, bringing to a gentle simmer.
  • Reduce heat to medium-low and gradually stir in cheddar and Parmesan cheeses until fully melted and smooth.

4. Combine Everything

  • Add the cooked rotini pasta to the cheese sauce, tossing to coat evenly.
  • Return the seared steak bites to the skillet, stirring gently to combine.

5. Serve & Garnish

  • Plate the pasta and steak mixture.
  • Garnish with fresh parsley and serve warm.
