Crispy on the outside and tender on the inside, these cheesy spicy chicken fritters are packed with juicy chicken, melted cheese, and a bold kick of heat. Perfect as an appetizer, snack, or main dish.

Ingredients

  • 2 cups cooked chicken breast, finely chopped
  • 1 cup shredded cheddar or mozzarella cheese
  • 2 large eggs
  • 1/4 cup all-purpose flour
  • 1/4 cup finely chopped green onions
  • 1 small jalapeño, finely minced
  • 2 tablespoons mayonnaise
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons vegetable oil (for frying)

Instructions

  1. In a large bowl, combine chicken, cheese, eggs, flour, green onions, jalapeño, mayonnaise, garlic powder, paprika, salt, and pepper. Mix until fully combined.
  2. Heat vegetable oil in a large skillet over medium heat.
  3. Scoop about 2 tablespoons of mixture per fritter into the skillet and flatten slightly.
  4. Cook for 3–4 minutes per side until golden brown and heated through.
  5. Transfer to a paper towel-lined plate to absorb excess oil.
  6. Serve warm with your favorite dipping sauce.

Notes

  • Use rotisserie chicken for convenience.
  • Bake at 400°F (200°C) for 15–18 minutes for a lighter option.
  • Store refrigerated for up to 3 days.
  • Reheat in oven or skillet to maintain crispiness.
