Cheesy Mushrooms Appetizer Toasts are savory bite-sized snacks made with sautéed garlic mushrooms and melted cheese on crispy baguette slices. Perfect for parties or cozy nights, these toasts are easy, versatile, and packed with flavor.

Ingredients

  1. 1 baguette or crusty bread, sliced into 2024 rounds
  2. 2 tbsp olive oil (plus more for brushing bread)
  3. 2 cloves garlic, minced
  4. 12 oz mushrooms (button, cremini, or mixed), finely chopped
  5. ½ tsp salt
  6. ¼ tsp black pepper
  7. 1 tsp fresh thyme or parsley, chopped (optional)
  8. 1 ½ cups shredded cheese (mozzarella, cheddar, Gruyère, or blend)
  9. ¼ cup Parmesan cheese, grated (optional)

Instructions

Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.

  1. Arrange bread slices on the sheet, brush lightly with olive oil, and toast for 5–7 minutes until slightly golden.
  2. Meanwhile, heat 2 tbsp olive oil in a skillet over medium heat. Add garlic and sauté 30 seconds until fragrant.
  3. Add chopped mushrooms and cook 8–10 minutes until golden and moisture evaporates. Season with salt, pepper, and herbs if using.
  4. Spoon mushroom mixture evenly onto toasted bread slices.
  5. Top each with shredded cheese and a sprinkle of Parmesan if desired.
  6. Bake another 5–7 minutes, until cheese is melted and bubbly.
  7. Serve warm or at room temperature.

Notes

  1. Toast bread before topping to prevent sogginess.
  2. Use different cheeses like goat cheese, fontina, or blue cheese for variation.
  3. For extra flavor, deglaze mushrooms with white wine or balsamic vinegar.
  4. Mushroom topping can be made ahead and refrigerated; assemble before serving.
  5. To reheat, bake at 350°F for 5–7 minutes—avoid microwaving.
