Cheesy crack chicken casserole is a creamy, comforting baked dish loaded with tender chicken, gooey cheese, ranch seasoning, and pasta. It’s a crowd-pleasing, all-in-one meal perfect for family dinners or potlucks.

Ingredients

  1. 3 cups cooked chicken (shredded or cubed, rotisserie works great)
  2. 12 oz pasta (penne, rotini, or preferred shape)
  3. 8 oz cream cheese, softened
  4. 1/2 cup sour cream
  5. 1 packet ranch seasoning mix
  6. 1 cup shredded cheddar cheese
  7. 1 cup shredded mozzarella cheese
  8. Salt and pepper to taste
  9. 2 green onions, chopped (optional, for garnish)

Instructions

Preheat oven to 350°F (175°C) and grease a large casserole dish.

  1. Cook pasta according to package instructions until al dente. Drain and set aside.
  2. In a large bowl, combine softened cream cheese, sour cream, ranch seasoning, and half of the cheddar and mozzarella cheeses. Mix until smooth.
  3. Add cooked chicken and pasta to the bowl. Stir well to coat and combine. Season with salt and pepper to taste.
  4. Transfer mixture to the prepared casserole dish and spread evenly.
  5. Sprinkle remaining cheddar and mozzarella cheese on top.
  6. Bake uncovered for 20–25 minutes, or until bubbly and golden brown on top.
  7. Garnish with chopped green onions before serving, if desired.
