Ingredients

  • 3 cups cooked, shredded chicken
  • 1 packet taco seasoning
  • 1 cup salsa or Rotel tomatoes
  • 4 oz cream cheese, softened
  • ½ cup sour cream
  • 2 cups shredded cheese (cheddar, Mexican blend, or your favorite)
  • 8 small corn or flour tortillas
  • 1 cup black beans (optional)
  • 1 cup corn (optional)
  • Chopped cilantro (for garnish)

Instructions

  1. Preheat & Prep: Preheat the oven to 375°F (190°C) and grease a baking dish.
  2. Prepare the Chicken Mixture: In a large bowl, mix shredded chicken, taco seasoning, salsa, cream cheese, and sour cream until well combined.
  3. Assemble the Casserole: Layer tortillas at the bottom of the baking dish, followed by the chicken mixture, black beans, corn, and shredded cheese. Repeat layers, finishing with a generous cheese topping.
  4. Bake: Cover with foil and bake for 20 minutes. Remove the foil and bake for another 10 minutes, or until the cheese is bubbly and golden.
  5. Garnish & Serve: Sprinkle with fresh cilantro and serve warm with sour cream, guacamole, or jalapeños.
