Cheesy Chicken Rice-a-Roni Casserole is a comforting, family-friendly dish made with tender chicken, seasoned rice, and plenty of melted cheese. This easy baked casserole transforms simple pantry staples into a warm and satisfying meal.

Ingredients

  • 1 (6.9 oz) box Rice-a-Roni, chicken flavor
  • 2 cups boneless, skinless chicken breasts, cooked and diced
  • 1 (10.5 oz) can cream of chicken soup
  • 1 cup sour cream
  • 2 cups shredded cheddar cheese, divided
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 1/2 cups frozen mixed vegetables

Instructions

  1. Preheat the oven to 350°F and lightly grease a 9×13-inch baking dish.
  2. Prepare the Rice-a-Roni according to package instructions, slightly undercooking it by a few minutes.
  3. In a large bowl, combine the cooked rice mixture, diced chicken, cream of chicken soup, sour cream, milk, garlic powder, onion powder, salt, and black pepper.
  4. Stir in the frozen mixed vegetables and 1 cup of shredded cheddar cheese.
  5. Spread the mixture evenly into the prepared baking dish.
  6. Sprinkle the remaining 1 cup of shredded cheddar cheese over the top.
  7. Cover with foil and bake for 20–25 minutes.
  8. Remove the foil and bake for an additional 10–15 minutes, until the cheese is melted and bubbly.
  9. Let rest for 5 minutes before serving.
