This Cheesy Breakfast Casserole is a hearty, comforting dish made with fluffy eggs, hashbrowns, savory sausage or bacon, and melty cheese—perfect for feeding a crowd or prepping breakfast ahead of time.

Ingredients

  • 8 large eggs
  • 1 cup whole milk or half-and-half
  • 4 cups frozen hashbrowns, thawed
  • 1 pound breakfast sausage or bacon, cooked and crumbled
  • 2 cups shredded cheddar cheese (or cheese blend)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon onion powder (optional)
  • 1/4 teaspoon garlic powder (optional)
  • Butter or non-stick spray for greasing

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Spread the thawed hashbrowns evenly across the bottom of the baking dish.
  3. Top with cooked sausage or bacon, then sprinkle with shredded cheese.
  4. In a large bowl, whisk together eggs, milk, salt, pepper, and optional onion and garlic powder.
  5. Pour the egg mixture evenly over the ingredients in the baking dish.
  6. Bake uncovered for 40–45 minutes, or until the center is set and the top is golden brown.
  7. Let cool for 5–10 minutes before slicing and serving.
