Ingredients

Cheesecake Filling:

  • 4 oz cream cheese, softened
  • 2 tbsp powdered sugar

Apple Cookie Dough:

  • ½ cup unsalted butter, softened
  • ¾ cup sugar
  • 1 egg
  • 1 tsp vanilla extract
  • ½ tsp apple extract (optional)
  • Green food coloring (optional)
  • 1 ½ cups all-purpose flour
  • ½ tsp baking soda
  • ½ tsp salt

Toppings:

  • ½ cup caramel sauce
  • ½ cup chopped pecans
  • Diced green apple pieces (optional)

Instructions

  • Prepare the Cheesecake Filling

    • Mix cream cheese, powdered sugar, and vanilla extract until smooth.
    • Scoop small teaspoon-sized portions onto a lined baking sheet.
    • Freeze for at least 30 minutes to firm up.
  • Make the Cookie Dough

    • Cream together butter and sugar until light and fluffy.
    • Mix in egg, vanilla extract, and apple extract (if using). Add green food coloring if desired.
    • In a separate bowl, whisk together flour, baking soda, and salt.
    • Gradually add dry ingredients to the wet ingredients, mixing until combined.
  • Assemble the Cookies
