Ingredients

  • 2 cans (8 oz. each) crescent roll dough
  • 16 oz. cream cheese, softened
  • 1/4 cup sour cream
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon kosher salt
  • 1/4 cup all-purpose flour
  • Powdered sugar (for dusting)

Instructions

  • Preheat the oven to 350°F (175°C) and grease a 9- x 13-inch baking pan with cooking spray.
  • Beat the cream cheese and sour cream in a large mixing bowl until smooth. Add sugar and mix until light and fluffy. Add eggs one at a time, then stir in lemon juice, vanilla extract, salt, and flour. Mix until fully incorporated.
  • Unroll one can of crescent roll dough and press it into the bottom of the prepared pan.
  • Spread the cheesecake filling evenly over the dough. Unroll the second can of crescent roll dough and place it on top of the filling.
  • Bake for about 30 minutes, or until golden brown and the filling is set.
  • Let cool completely before dusting with powdered sugar and cutting into desired shapes. Serve and enjoy!

Notes

  • You can add variations like lemon zest, cinnamon, or nutmeg to the filling.
  • Jam can be swirled into the filling for a fruity flavor.
  • For a sopapilla effect, brush the top with melted butter and sprinkle with cinnamon sugar before baking.
