Cheeseburger Hot Pockets are golden, flaky handheld pastries filled with seasoned ground beef, melted cheddar cheese, and pickles. They’re the perfect on-the-go meal or snack with all the flavor of a classic cheeseburger.

Ingredients

  • 1 lb ground beef
  • 1/2 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 2 tbsp ketchup
  • 1 tbsp yellow mustard
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 1/2 cups shredded cheddar cheese
  • 1/4 cup chopped pickles (optional)
  • 1 can refrigerated pizza dough or crescent roll dough
  • 1 egg, beaten (for egg wash)
  • 1 tbsp sesame seeds (optional, for topping)

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a skillet over medium heat, cook ground beef until browned. Drain excess fat.
  3. Add onion and garlic. Sauté 2–3 minutes until softened.
  4. Stir in ketchup, mustard, salt, and pepper. Simmer for 2–3 minutes, then remove from heat and let cool slightly.
  5. Roll out dough and cut into 6 rectangles (about 4×6 inches).
  6. Spoon beef mixture onto half the rectangles. Top with shredded cheese and chopped pickles if using.
  7. Top with remaining dough rectangles. Seal edges and crimp with a fork.
  8. Brush tops with beaten egg and sprinkle with sesame seeds if desired.
  9. Bake for 15–20 minutes until golden brown. Let cool slightly before serving.

Notes

  • Make a double batch and freeze extras for future meals.
  • Customize with bacon, jalapeños, or different cheeses.
  • Seal edges tightly to prevent filling leaks.
  • Air fry for extra crispiness at 350°F (175°C) for 8–10 minutes.
