Ingredients

  • 300 grams fresh spinach (or 200 grams frozen)
  • 200 grams ricotta cheese
  • 100 grams mozzarella or feta cheese (optional)
  • 500 grams puff pastry
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 egg (for egg wash)
  • Salt and pepper to taste
  • Olive oil for sautéing

Instructions

  • Prepare the Filling: Sauté onions and garlic in olive oil until translucent. Add spinach (fresh or thawed frozen) and cook until wilted. Allow the mixture to cool before adding ricotta cheese, mozzarella or feta, and seasonings. Mix well.
  • Assemble the Pastries: Roll out the puff pastry and cut into circles. Spoon the filling into the center of each circle. Fold each circle into a half-moon shape and press the edges with a fork to seal.
  • Bake: Brush the pastries with egg wash and bake at 400°F (200°C) for 25 minutes, or until golden brown and crispy.
  • Serve: Allow the pastries to cool for a few minutes before serving.
