Cheese and Onion Sandwich

A classic British sandwich filled with sharp Cheddar, optional Red Leicester, fresh onion, creamy mayonnaise, and a touch of black pepper, served between soft buttered bread for a comforting, savory bite.

Ingredients

  1. 4 oz (115 g) Cheddar cheese, grated
  2. 4 oz (115 g) Red Leicester cheese (optional), grated
  3. 1 small red onion or 3 spring onions, finely diced
  4. 3 tbsp mayonnaise
  5. 8 slices soft bread of choice
  6. 2 tbsp butter, softened
  7. 1/4 tsp black pepper

Instructions

Grate the Cheddar and Red Leicester cheeses into a mixing bowl.

  1. Finely dice the onion and add it to the bowl.
  2. Stir in the mayonnaise and black pepper until the mixture is creamy and well combined.
  3. Butter one side of each bread slice.
  4. Spread the cheese-onion filling evenly over the buttered side of half the bread slices.
  5. Top with the remaining slices, butter side down.
  6. Slice each sandwich into halves or quarters and serve immediately, or chill briefly before serving.

Notes

  1. For a milder onion flavor, use spring onions or chives.
  2. Best enjoyed fresh but can be chilled for up to 1 day after assembly.
  3. Try toasting or grilling for a warm, melty version.
  4. Filling can be prepared up to 3–4 days in advance and stored in the refrigerator.
