Cheese and Onion Pasties are a comforting classic made with a savory filling of sweet caramelized onions, tender potatoes, and melted cheddar cheese wrapped in golden, flaky pastry. Perfect for lunches, picnics, or light dinners, these hand-held pies are simple yet deeply satisfying.

Ingredients

  • 1 sheet puff pastry, thawed
  • 2 tablespoons butter
  • 2 medium onions, thinly sliced
  • 1 medium potato, peeled and finely diced
  • 1 cup grated mature cheddar cheese
  • 1 teaspoon dried thyme
  • Salt and black pepper to taste
  • 1 egg, beaten

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Melt butter in a skillet over medium heat. Add sliced onions and cook for 8 to 10 minutes until softened and lightly golden.
  3. Add diced potato and cook for another 5 minutes until slightly tender. Remove from heat and let cool.
  4. Stir in grated cheddar cheese, dried thyme, salt, and black pepper.
  5. Roll out puff pastry and cut into equal circles or rectangles.
  6. Spoon filling onto one half of each pastry piece, leaving a border around the edges.
  7. Fold pastry over the filling and seal edges firmly with a fork.
  8. Place on prepared baking sheet and brush tops with beaten egg.
  9. Bake for 20 to 25 minutes until golden brown and puffed.
  10. Cool slightly before serving.
