Ingredients
2 boneless, skinless chicken breasts or thighs
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon garlic powder
1/2 teaspoon paprika
1 tablespoon olive oil
3 tablespoons butter, divided
3 cloves garlic, minced
12 oz penne pasta
1 cup heavy cream
1 cup sharp cheddar cheese, shredded
1/2 cup parmesan cheese, grated
1/4 cup chicken broth (optional, for thinning sauce)
1 tablespoon fresh parsley, chopped (for garnish)
Instructions
Cook the penne pasta according to package directions. Drain and set aside.
Season the chicken with salt, pepper, garlic powder, and paprika.
Heat olive oil and 1.5 tablespoons of butter in a skillet over medium-high heat. Sear chicken for 5–7 minutes per side until golden and cooked through. Remove and set aside.
In the same skillet, lower heat to medium and add remaining butter. Sauté minced garlic for 1–2 minutes until fragrant.
Pour in heavy cream and bring to a gentle simmer. Stir in cheddar and parmesan cheese until melted and smooth. Add chicken broth if the sauce is too thick.
Slice the cooked chicken and return it to the skillet, coating with the sauce.
Add cooked penne pasta and toss until evenly coated and heated through.
Garnish with chopped parsley and serve immediately with extra cheese if desired.

Use freshly shredded cheese for best melting and texture.
Add chicken broth or reserved pasta water to loosen sauce as needed.
