Cauliflower Soup is a creamy, comforting, and nutritious soup made from pureed cauliflower and simple ingredients. It’s a versatile dish that can be enjoyed as a light meal or an elegant starter, offering a smooth texture and delicate flavor.

Ingredients

  • Cauliflower florets – 4 cups
  • Onion, chopped – 1 medium
  • Garlic, minced – 3 cloves
  • Vegetable broth or chicken broth – 4 cups
  • Olive oil or butter – 2 tablespoons
  • Coconut milk, cream, or milk (optional) – 1 cup
  • Salt and pepper – to taste
  • Fresh herbs like thyme or parsley (optional) – for garnish

Instructions

Heat olive oil or butter in a large pot over medium heat. Add chopped onion and sauté until translucent.

  1. Add minced garlic and cook for another minute.
  2. Add cauliflower florets and broth to the pot. Bring to a boil, then reduce heat and simmer until cauliflower is tender, about 15-20 minutes.
  3. Use an immersion blender or transfer soup in batches to a blender and puree until smooth.
  4. Stir in coconut milk or cream if using, and season with salt and pepper to taste.
  5. Heat gently for a few minutes to warm through.
