Carrot Fritters are crispy, savory patties made from grated carrots, herbs, and a simple batter, pan-fried until golden. They’re an easy, delicious way to enjoy carrots—perfect as an appetizer, side dish, or light meal.

Ingredients

  • 2 cups grated carrots
  • 2 eggs (or flax eggs for vegan: 2 tbsp ground flaxseed + 6 tbsp water)
  • 1/3 cup all-purpose flour or chickpea flour
  • 1/2 tsp baking powder
  • 2 garlic cloves, minced
  • 2 green onions or 2 tbsp chopped herbs (parsley, cilantro, or dill)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp ground cumin or paprika (optional)
  • 23 tbsp olive oil or neutral oil for frying

Instructions

  1. In a large bowl, combine grated carrots, garlic, herbs, salt, pepper, and spices.
  2. Add eggs and flour. Mix until the batter is well combined. Add more flour if the mixture is too wet.
  3. Heat a thin layer of oil in a skillet over medium heat.
  4. Scoop about 2 tablespoons of batter per fritter and flatten slightly.
  5. Pan-fry for 3–4 minutes on each side until golden brown and cooked through.
  6. Remove and drain on a paper towel. Serve hot with your favorite dipping sauce.
