Ingredients
1 cup rolled oats
3/4 cup all-purpose flour
1/2 tsp baking soda
1/2 tsp baking powder
1 tsp ground cinnamon
1/2 tsp ground ginger
1/4 tsp salt
1/2 cup unsalted butter, softened
1/2 cup brown sugar
1/4 cup granulated sugar
1 egg
1 tsp vanilla extract
3/4 cup finely shredded carrots
Optional: 1/4 cup raisins, chopped walnuts, or shredded coconut
Cream Filling:
4 oz cream cheese, softened
2 tbsp unsalted butter, softened
3/4 cup powdered sugar
1/2 tsp vanilla extract
Pinch of salt
Instructions
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a bowl, whisk together oats, flour, baking soda, baking powder, cinnamon, ginger, and salt.
In another bowl, beat butter, brown sugar, and granulated sugar until light and fluffy.
Add the egg and vanilla, and mix until combined.
Stir in the dry ingredients until just combined, then fold in shredded carrots and any optional mix-ins.
Scoop 1 tablespoon of dough per cookie onto the baking sheet, spacing 2 inches apart.
Bake for 10–12 minutes until edges are set and lightly golden. Cool on the sheet for a few minutes, then transfer to a wire rack.
Meanwhile, beat cream cheese, butter, powdered sugar, vanilla, and salt until smooth and fluffy.
Pair up cookies by size. Pipe or spread cream filling on one cookie and top with the other to form sandwiches.
Chill for 10–15 minutes to set before serving.
Notes
Use freshly shredded carrots for best texture and flavor.
Store assembled cookies in the fridge and let sit at room temp before serving.
Freeze unbaked dough balls or assembled cookies for longer storage.
