Caramelized Onion Butternut Squash Tart is a savory, autumn-inspired dish made with roasted butternut squash, sweet caramelized onions, and herbs layered over a flaky crust. It’s perfect for gatherings, brunch, or a cozy dinner.

Ingredients

  • 1 medium butternut squash, peeled and cubed
  • 2 large yellow onions, thinly sliced
  • 2 tbsp olive oil or butter (plus more for roasting)
  • 1 sheet puff pastry or 1 pie crust (store-bought or homemade)
  • 1 tsp fresh thyme or rosemary (optional)
  • Salt and pepper to taste
  • 1 egg (for egg wash, optional)
  • 1/2 cup goat cheese, feta, or Gruyère (optional)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss cubed butternut squash with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes until tender and golden. Set aside.
  3. Meanwhile, heat 2 tbsp olive oil or butter in a large skillet over medium-low heat. Add sliced onions and cook, stirring often, for 30–40 minutes until deeply caramelized.
  4. Roll out puff pastry or pie crust and place on a baking sheet or tart pan.
  5. Spread caramelized onions evenly over the crust, leaving a 1-inch border if using puff pastry.
  6. Top with roasted squash, sprinkle with herbs and cheese if using.
  7. Fold the edges slightly inward and brush with egg wash if desired.
  8. Bake for 20–25 minutes, or until the crust is golden and the topping is lightly browned.
  9. Let cool slightly before slicing and serving warm or at room temperature.
