Caramelized Onion and Apple Grilled Cheese is a cozy, gourmet sandwich layered with sweet caramelized onions, tart apple slices, and gooey melted cheese between golden, buttery bread. It’s a bistro-style twist on a comfort classic.

Ingredients

  1. 4 slices sourdough, brioche, or artisan bread
  2. 4 tablespoons butter, softened (for spreading and caramelizing)
  3. 2 medium onions (yellow or sweet), thinly sliced
  4. 1 tablespoon olive oil (optional, for caramelizing)
  5. 1 medium apple (Granny Smith, Honeycrisp, or Pink Lady), thinly sliced
  6. 4 ounces cheese (Gruyère, sharp cheddar, or Fontina), sliced or shredded
  7. Pinch of salt
  8. Optional: 2 teaspoons Dijon mustard, fresh thyme, or a handful of arugula

Instructions

  1. Heat 1 tablespoon butter or olive oil in a skillet over medium heat. Add sliced onions and a pinch of salt. Cook slowly, stirring often, for 20–25 minutes until golden and caramelized. Set aside.
  2. Butter one side of each bread slice. On the unbuttered side, layer cheese, caramelized onions, apple slices, and another layer of cheese. Top with the second slice of bread, buttered side facing out. Add Dijon mustard inside if desired.
  3. Heat a skillet or griddle over medium heat. Cook sandwiches for 3–4 minutes per side, pressing gently with a spatula, until bread is golden brown and cheese is melted.
  4. Let rest for 1–2 minutes before slicing and serving.

Notes

  • Caramelize onions in advance and store in the fridge for up to 5 days.
  • Cook over medium-low heat to prevent burning while ensuring cheese melts fully.
  • For extra flavor, add prosciutto, ham, or turkey slices.
  • Bake sandwiches at 375°F for 10–12 minutes for a hands-off version.
  • Best served fresh; reheating in a skillet keeps bread crisp.
