Caramelized Carrot Tarte Tatin is a savory-sweet upside-down tart featuring tender carrots glazed in golden caramel, topped with buttery puff pastry. Elegant, earthy, and flavorful, it’s perfect as a vegetarian main, side, or appetizer for any occasion.

Ingredients

  • 68 medium carrots, peeled and halved lengthwise
  • 1 sheet puff pastry, thawed
  • 2 tbsp granulated sugar or honey
  • 2 tbsp butter
  • 1 tbsp balsamic vinegar or red wine vinegar
  • Salt and pepper to taste
  • 12 tsp olive oil
  • Fresh thyme or rosemary (optional, for garnish)

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Boil or steam carrots for 5–7 minutes until just tender. Drain and set aside.
  3. In an ovenproof skillet, melt butter and sugar over medium heat until it turns golden and caramelizes.
  4. Stir in balsamic vinegar, salt, and pepper. Simmer briefly.
  5. Arrange carrots cut side down in the caramel snugly.
  6. Roll out puff pastry slightly larger than the skillet. Drape over carrots and tuck in edges.
  7. Bake for 25–30 minutes until puffed and golden.
  8. Cool for 5–10 minutes, then carefully invert onto a serving plate.
  9. Garnish with fresh herbs if desired and serve warm or at room temperature.
