Caramel Apple Poke Cake is a soft, spiced apple cake soaked in rich caramel sauce and topped with fluffy whipped cream and a caramel drizzle. Each bite captures the cozy sweetness of a caramel apple in cake form — moist, luscious, and full of fall flavor.

Ingredients

  • For the cake:
  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1½ tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • ¾ cup brown sugar
  • ½ cup granulated sugar
  • 3 large eggs
  • ¾ cup unsalted butter, melted
  • ½ cup applesauce or oil
  • 1 tsp vanilla extract
  • 2 cups finely chopped apples (Granny Smith or Honeycrisp)
  • For the filling and topping:
  • 1 cup caramel sauce (homemade or store-bought)
  • 2 cups whipped topping or whipped cream
  • ¼ cup toffee bits or chopped pecans (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg. Set aside.
  3. In a large bowl, whisk together melted butter, brown sugar, granulated sugar, eggs, applesauce (or oil), and vanilla until smooth.
  4. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Fold in chopped apples.
  5. Pour the batter into the prepared pan and bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.
  6. Cool the cake for 10 minutes. Using the handle of a wooden spoon, poke holes evenly across the warm cake.
  7. Pour caramel sauce over the top, allowing it to soak into the holes.
  8. Let the cake cool completely, then spread whipped topping evenly over the top.
  9. Drizzle additional caramel over the whipped topping and sprinkle with toffee bits or nuts if desired.
  10. Chill for at least 30 minutes before serving.
