Caramel Apple Fritter Bread is a moist, cinnamon-swirled loaf layered with tender apples and finished with a rich caramel glaze. This bakery-style quick bread is perfect for fall, offering warm spice and sweet apple flavor in every slice.

Ingredients

  • Apple Layer:
  • 2 medium apples, peeled and diced
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • Bread Batter:
  • 1 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1/3 cup unsalted butter, melted
  • Caramel Glaze:
  • 1/3 cup brown sugar
  • 2 tablespoons unsalted butter
  • 2 tablespoons heavy cream
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a 9×5-inch loaf pan with parchment paper.
  2. In a small bowl, mix diced apples with 2 tablespoons sugar and 1 teaspoon cinnamon. Set aside.
  3. In a large bowl, whisk together flour, baking powder, and salt.
  4. In another bowl, mix sugar, eggs, milk, vanilla, and melted butter until smooth.
  5. Add the dry ingredients to the wet mixture and stir until just combined.
  6. Pour half of the batter into the loaf pan. Layer with half of the apple mixture, pressing gently into the batter.
  7. Repeat with remaining batter and apples. Swirl the top apple layer lightly into the batter with a knife.
  8. Bake for 55–65 minutes, or until a toothpick inserted in the center comes out clean.
  9. Cool in the pan for 15 minutes, then transfer to a wire rack.
  10. While cooling, make the caramel glaze: in a saucepan over medium heat, combine brown sugar, butter, and cream. Simmer while stirring until slightly thickened (about 3–4 minutes). Remove from heat and stir in vanilla and salt.
  11. Drizzle the warm caramel over the cooled bread before serving.

Notes

  • Use tart apples like Granny Smith or sweet-tart ones like Honeycrisp for best flavor.
  • The caramel can be made ahead and stored in the fridge—reheat before drizzling.
  • For extra crunch, sprinkle chopped pecans between layers.
