For the Caramel Sauce:

  • 1 cup granulated sugar
  • ¼ cup water
  • ½ cup heavy cream
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract

Instructions

. Prepare the Crust

  • Preheat oven to 325°F (163°C). Grease a 9-inch springform pan.
  • In a bowl, mix graham cracker crumbs, melted butter, and sugar until combined.
  • Press the mixture evenly into the bottom of the prepared pan.
  • Bake for 10 minutes, then let cool while preparing the filling.

2. Make the Cheesecake Filling

  • In a large bowl, beat cream cheese and sugar until smooth.
  • Add eggs one at a time, mixing after each addition.
  • Stir in vanilla extract, sour cream, and heavy cream until well combined.
  • Pour the filling over the cooled crust, smoothing the top.

3. Bake the Cheesecake

  • Bake for 60-70 minutes, or until the center is slightly set.
  • Turn off the oven and let the cheesecake cool inside with the door slightly open for 1 hour.
  • Refrigerate for at least 4 hours or overnight.

4. Prepare the Apple Topping

  • In a skillet over medium heat, melt butter.
  • Add apples, brown sugar, and cinnamon, stirring occasionally.
  • Cook for 5-7 minutes until apples are tender. Let cool.

5. Make the Caramel Sauce

  • In a saucepan over medium heat, combine sugar and water.
  • Cook without stirring until the sugar turns a deep amber color.
  • Remove from heat and carefully whisk in heavy cream, butter, and vanilla extract.
  • Let cool slightly before drizzling.

6. Assemble and Serve

  • Arrange the apple topping over the chilled cheesecake.
  • Drizzle generously with caramel sauce before serving.

Notes

  • Best Apples to Use: Granny Smith, Honeycrisp, or Fuji hold their shape well.
  • For a Salted Caramel Twist: Add a pinch of sea salt to the caramel sauce.
  • Avoid Cracks: Use a water bath or cool the cheesecake gradually in the oven.
  • Make Ahead: Cheesecake tastes best when chilled overnight before serving.
