Ingredients

  1. 4 boneless, skinless chicken breasts
  2. 2 tablespoons olive oil
  3. Salt and pepper, to taste
  4. 1 teaspoon garlic powder
  5. 1 teaspoon dried oregano (optional)
  6. 1 cup fresh mozzarella cheese, sliced
  7. 2 medium tomatoes, sliced
  8. 1/4 cup fresh basil leaves
  9. 1/4 cup balsamic glaze (store-bought or homemade)
  10. 1 tablespoon fresh basil, chopped (optional, for garnish)

Instructions

Prepare the Chicken: Season the chicken breasts with salt, pepper, garlic powder, and oregano (if using). This adds flavor to the chicken before it’s cooked.

  1. Cook the Chicken: In a large skillet, heat the olive oil over medium-high heat. Once the oil is hot, add the chicken breasts and cook for 6-7 minutes per side, or until golden brown on the outside and fully cooked through (internal temperature should reach 165°F or 75°C).
  2. Assemble the Caprese Toppings: Once the chicken is cooked, top each breast with a slice of fresh mozzarella, a few slices of tomato, and a couple of fresh basil leaves.
  3. Melt the Cheese: Cover the skillet with a lid and cook for an additional 1-2 minutes on low heat to melt the mozzarella cheese. Alternatively, you can place the skillet in the oven under the broiler for about 2-3 minutes to melt the cheese and give it a bubbly, golden top.
  4. Drizzle with Balsamic Glaze: Once the cheese is melted, remove the skillet from the heat. Drizzle the chicken with balsamic glaze and garnish with fresh chopped basil.
  5. Serve: Serve the Caprese Chicken warm with your favorite side dishes, such as roasted vegetables, rice, or a simple green salad.
