Cake Mix Cookies are soft, chewy, and incredibly easy to make using just a boxed cake mix, eggs, and oil. With endless flavor and mix-in possibilities, these cookies are the perfect quick dessert for any occasion.

Ingredients

  • 1 box cake mix (any flavor, about 15.25 oz)
  • 2 large eggs
  • 1/2 cup vegetable oil (or melted butter)
  • Optional mix-ins: 1 cup chocolate chips, sprinkles, M&M’s, nuts, or candies

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large mixing bowl, combine cake mix, eggs, and vegetable oil. Stir until a thick dough forms.
  3. Fold in any desired mix-ins such as chocolate chips, sprinkles, or nuts.
  4. Scoop tablespoon-sized portions of dough and place them about 2 inches apart on the prepared baking sheet.
  5. Bake for 9–11 minutes, until edges are set and centers are slightly soft.
  6. Cool cookies on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • Use any cake mix flavor for endless variety.
  • Chill sticky dough for 15–20 minutes before baking for easier handling.
  • For thicker cookies, reduce oil slightly or chill the dough before baking.
  • Store with a slice of bread to keep cookies soft.
  • Turn the dough into bars by baking in a 9×13-inch pan for 18–20 minutes.
