Ingredients

  • 1 lb shrimp, peeled and deveined
  • 8 oz pasta (fettuccine, linguine, or penne)
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 2 bell peppers (any color), sliced
  • 1 zucchini, sliced
  • 1 cup cherry tomatoes, halved
  • 2 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tbsp Cajun seasoning (adjust to taste)
  • 1/2 cup heavy cream or half-and-half (optional)
  • Salt and pepper to taste
  • 2 tbsp fresh parsley, chopped (for garnish)
  • Grated Parmesan (optional)

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium-high heat.
  3. Add shrimp, season with Cajun seasoning, and cook until pink and opaque, about 2-3 minutes per side. Remove and set aside.
  4. In the same skillet, add more oil if needed, then sauté garlic for about 30 seconds.
  5. Add bell peppers, zucchini, and cherry tomatoes. Cook for 5-7 minutes until vegetables are just tender.
  6. Stir in lemon juice, lemon zest, and heavy cream (if using). Simmer for 2-3 minutes.
  7. Return shrimp to the skillet and toss everything together.
  8. Add cooked pasta and mix until well combined.
  9. Season with salt and pepper to taste.
  10. Garnish with parsley and Parmesan if desired. Serve warm.
