Cajun Shrimp Boil in Foil combines shrimp, sausage, corn, and potatoes all seasoned with bold Cajun spices for a delicious, one-pan meal. The foil packets ensure easy cooking and cleanup, whether grilling or baking, making this a hassle-free, flavorful dish.

Ingredients

  1. 1 lb large shrimp, peeled and deveined
    2 ears of corn, cut into thirds
    1 lb small red potatoes, halved
    1/2 lb smoked sausage, sliced
    3 tablespoons olive oil
    2 tablespoons Cajun seasoning
    1 teaspoon garlic powder
    1/2 teaspoon smoked paprika
    1/4 teaspoon cayenne pepper (optional, for heat)
    Salt and pepper, to taste
    2 tablespoons butter, cut into small cubes
    1 tablespoon fresh parsley, chopped (for garnish)
    Lemon wedges (for garnish)

Instructions

Preheat your grill to medium heat (about 375°F) or preheat your oven to 400°F.

  1. Prepare four large pieces of aluminum foil. Place a large piece of foil on a flat surface for each packet.
  2. In a large mixing bowl, combine the shrimp, corn, potatoes, sausage, olive oil, Cajun seasoning, garlic powder, smoked paprika, cayenne (if using), salt, and pepper. Toss everything together until the shrimp and vegetables are well-coated with the seasoning mixture.
  3. Divide the mixture evenly among the four foil sheets. Place 1/2 tablespoon of butter on top of each packet, then fold the foil over the ingredients to seal it, creating a tightly sealed packet.
  4. Place the foil packets on the grill or on a baking sheet if using the oven. Grill or bake for 20-25 minutes, or until the shrimp are pink and opaque, the potatoes are tender, and the corn is cooked through.
  5. Carefully open the foil packets (be cautious of the steam) and garnish with fresh parsley and lemon wedges before serving.

Notes

  • Add other veggies like bell peppers, zucchini, or onions to the packet for extra flavor.
  • For more traditional Cajun flavor, swap the smoked sausage for Andouille sausage.
  • Increase the cayenne or add hot sauce to spice it up.
