Ingredients

4 boneless, skinless chicken breasts

2 tablespoons Cajun seasoning

1 tablespoon olive oil

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 green bell pepper, sliced

1 medium onion, sliced

2 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon paprika

Salt and pepper to taste

1 tablespoon fresh parsley, chopped (optional for garnish)

Instructions

  • In a small bowl, combine the Cajun seasoning, thyme, paprika, salt, and pepper.

  • Rub the seasoning mixture evenly over both sides of the chicken breasts.

  • Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken breasts and cook for 6-7 minutes per side, or until the chicken is cooked through and golden brown. Remove the chicken from the skillet and set it aside.

  • In the same skillet, add the sliced bell peppers, onion, and minced garlic. Sauté for 5-7 minutes, or until the vegetables are softened and lightly caramelized.

  • Slice the cooked chicken breasts and add them back to the skillet with the peppers and onions. Stir to combine, cooking for another 2-3 minutes to heat everything through.

  • Garnish with fresh parsley (optional) and serve immediately.
